I love this recipe, it has been a family favorite for many years. I hope you enjoy it as much as we have.
3-5 lb boneless chuck roast
2 T of oil
1/4 C all purpose floor
5 baby dutch gold potatoes cut into quarters
5 carrots peeled and cut into diagonal slices
1 yellow onion
2 T of finely chopped italian flat leaf parsley
salt and pepper to taste
Directions
Pre-heat oven to 350
coat roast with the floor and then brown the roast on all sides in the oil in a large dutch oven,add the onions carrots and potatoes into the pot and place in oven for 3 hours. Place roast and vegetables on a plater and sprinkle the parsley over the roast. Enjoy.
